SKILL PROFICIENCY PROGRAMMES:



 

Knowledge and practical competence required in own area of work regarding:

  • Correct application of health, hygiene and safety practices
  • Being able to identify hazards in the workplace
  • Preparation of service areas and correct procedures of service
  • Selection, use and storage of appropriate commodities and equipment for the service of specific beverages and meals
  • Identifying the correct procedures for different menus


Knowledge components:

  • Maintaining health, hygiene and safety practices for self and others
  • Organising and carrying out food and beverage services
  • Interacting with customers when providing services

 


Completion of a written assessment to recognise your prior learning of the competencies required for the above Foundation Certificate would enable you to progress to the following Skills Proficiency Certificate.

 


  • Performing safe working practices and basic first aid procedures
  • Communicating effectively and professionally with customers and colleagues
  • Following the correct procedures when greeting and seating customers
  • Knowledge of, and ability to explain, simple cookery and menu terms
  • Selecting appropriate equipment for food service
  • Contributing to successful team work
  • Demonstrating appropriate skills when dealing with different types of customers
  • Meeting pre-service preparation deadlines
  • Fulfilling customer expectations through excellent service
  • Knowledge of special diets and cultural needs
  • Applying the correct service procedures for hot and cold beverages



This programme, including the training and assessment of both levels, requires 9 x 8 hour days.  Training sessions can be presented at once or over a period of time a few sessions per week, from 09:00 to 17:00, to accommodate the Hotel’s operational requirements.

  • Basic cleaning techniques and correct use of chemicals and equipment
  • Working with other people in a service environment
  • Maintaining health, hygiene and safety practices for self and others
  • Organising and performing correct cleaning procedures
  • Interacting with customers when providing services

 



Completion of a written assessment to recognise your prior learning of the competencies required for the above Foundation Certificate would enable you to progress to the following Skills Proficiency Certificate.

 

  • Maintaining health and safety; selection and use of protective clothing and safety equipment for specific tasks
  • Performing safe working practices and basic first aid procedures
  • Inspection for faults, set-up and safe use of equipment
  • Correct handling and storage of chemical substances
  • Complying with establishment’s emergency procedures
  • Demonstrating appropriate skills when dealing with different types of customers
  • Applying appropriate security procedures regarding property of guests
  • Reporting incidents in line with establishment procedures
  • Performing housekeeping services
  • Applying appropriate cleaning and preparation procedures for all areas and fittings using appropriate methods and materials
  • Practicing good working standards
  • Inter-acting with other departments

This programme, including the training, class room assessment and practical assessments in the workplace, requires 6 months. Training and assessment sessions will be tailored to accommodate the Hotel’s operational needs and requirements.
